I feel like the only problem with that sequence is, as you say, it's disproportionate. Jurassic World would be a way better movie if it had a bunch of park guests getting wrecked by dinosaurs. That way she's not being singled out and, more importantly, there'd be actual monster mayhem in the monster movie. But I guess that would make it harder to have a sequel where the park is open again.

I assumed a lot of people died offscreen during the pterodactyl attack since there were so many people on the streets and so many dinos swooping around, they just only focused on one person and in a way normally reserved for a minor villain or something. Maybe all the other people were just good runners. e: It's mostly just as ambiguous as possible. But I like the old guy grabbing 2 margaritas as he runs. Anyways, I'm not saying it's impossible that a sequel would have some statistic about how 37 guests died or whatever, but as MacheteZombie confirmed (thanks for that), they're very careful to avoid showing it.

I'm sure they had some very specific ideas about what they needed to do to maintain the PG-13 rating. Like, down to exactly how many deaths they could put in the movie, and I'm sure there was even some calculus done about how many innocent visitor deaths they could include versus employees.

The assistant's death works because audiences are conditioned to accept two types of deaths: good people's deaths, and bad people's deaths. Good people's deaths are clean and without suffering, because they are good people. Bad people get slower, more painful, more elaborate deaths. The assistant's death reminds us that such a thing is a purely cinematic/human construct that the animals don't recognize of give a poo poo about. Her death is without message about her deserving it or not; the violence she experiences comes from three animals wanting her for dinner, nothing more.

The notion that there isn't one - she dies the way she dies because of purely conditional reasons - is an alien concept. They don't need to address it again, because it's such a drastic scene that flaunts convention*. We're still talking about it long after the movie is out because it's so jarringly different. A lady dies a Bad Guy Death without being a bad guy, just because she was in the wrong place at the wrong time around wrongly made monster-dinos. That just doesn't happen. * Hell, I'd argue that the movie does it again in the finale(ish) of the movie. The gung-ho military guy gets an almost Good Guy Death from the raptor; off-screen and (if memory serves, it's been a while) rather bloodless.
