I don't think I ever had bad hot pot, but the best hot pot I ever had was donkey meat hot pot at the donkey restaurant. They also made donkey blood rice in a stone pot, both were phenomenal. 天上龙肉 地上驴肉

You have a broth and you put in veg by cooking time (also tofu skin etc) then when it's cooked to a delicious broth you dip the meat in briefly and eat, alternating with veg and soup. It's not that hard a concept and can be lovely, sure but mostly is great (this was Zhejiang style). A lot of the time it's also offal and beak etc though so it was always fun to do some sleight-of-chopstick to pretend you never picked up that uvula or whatever the gently caress.

hot pot is special because you are boiling all of the nutrition out of the meat and veg and then ignoring the soup that contains everything leeched out of the food so it is quite literally the least nutritious or flavorful way to eat meat and vegetables. Chongqing was hilarious because sichuan hotpot is kinda their thing so they have tons of DIY Hotpot vendors that will sell you the congealed bricks of lard and spice that you just drop into a pot of boiling water, and the dipping sauce is a small metal can of mostly-flavorless oil as opposed to satay or whatever. So all food will have one specific flavor (which if thats your jam then go for it) and be super unhealthy The only hotpot I've ever really liked was Dolar Shop-types where you can order a bunch of small pots of different soups and there are dozens of pick-and-mix dipping sauces so at least you get some variety in flavor and can actually eat the goddamn soup like a normal person. That said, any korean/japanese place where you grill the food is far superior for taste and maybe health and still has the social aspect of hotpot. In short, hotpot can go gently caress itself unless you are a literal witch cackling and boiling eye of newt

Hotpot is goddamn delicious you all people complaining about it probably just never had a proper one. It's not the best Chinese food but it's definitely up there somewhere. Also the water you cook it in is heavily flavoured, it's more like a really thick and spicy soup. E: I mean the people who are like wait hotpot is fondue?!?? Not the goons in China. I think too many people in this thread had bad experiences with Sichuan style hotpot. Taiwan has its own style of hotpot, do you know? It's actually quite different. More of a premade soup than the do-it-yourself thing that's been posted here. Also it can be legit spicy, not bullshit Chinese ma la spicy. I'm pretty tough when it comes to spicy food but at the Taiwanese hotpot place near me even the medium level is difficult.

Not long after I first got to China I was wandering around the fanciest hotel in town and noticed it had a fancy Korean restaurant, so I went in there to get dinner. They had the BBQ at your table bulgogi and kalbi setup, but instead of cooking it yourself, one of the pretty waitresses would stand at your table and do it for you. I wanted to cook it myself, but I hadn't learned any Chinese yet, so I tried to use hand gestures to indicate I didnt want her to do the tongs for me every time. Like I'd point to the tongs, or pick them up when she was about to pick them up, and wave my hand back and forth for no, and point to myself, and do it myself. She couldn't figure out what I meant, and eventually got a manger gal and had a powwow, and after a bit they seem to have figured out that I didnt like those particular tongs she was using, so they brought out like five different sets of tongs for me to choose from for the gal to use. - My other hand gestures gone wrong story is also from very early in my Chinese adventures. I had finished eating lunch somewhere and it was time to get the bill, so I made the "universal gesture for bring me the bill," pretending i had a pen in my hand and writing on my palm. They were duly perplexed but finally figured out that what I wanted was some paper and a pen to write. You know you are finally comfortable living in China when you make peace with shouting "MM GOI MAI DAN, MAI DAN AH!!!" or "LUNG NOY MAI DAN!!!" over the din, or i guess FUWUYUAN MAI DAN! if you have the misfortune of not living in guangdong. One night in awful Anhui we were out drinking late at a Qingdao beer hall place, and a drunk chinese dude kicked in the door, dragged in his woman, sort of skidded to a halt, and screamed at the top of his lungs "FUUUWUYUANNNNNNN!!!!!"

meanwhile ev japanese person ive seen understands the check hand sign (unless youre supposed to pay at the counter). Also chinese hot pot is very good but you aren't supposed to use the best cuts of meat. So you can toss it all in and not give a gently caress.
