Are avocado seeds so easy to cut that someone could accidentally stab all the way through it? Or was this particular knife just so amazingly sharp that it turned into a vorpal blade? The only other scenario I can think of is that the 'chef' stabbed the knife into the avocado pip a few eighths of an inch and for some reason tried to drive it in further by turning it all upside down and hammering the handle of the knife against the bench.

Perhaps they were trying to stab and cut around it like you would to get an eye out of a potato? Definitely not the right technique for an avocado.

Just want to drop in and say once I couldn't find a chef's knife and I was in a hurry and tried to use a paring knife to core an avocado and the exact same thing happened to me, only with a paring knife so it was barely anything to worry about. But yes, you can actually stab straight through the pit and they're not as hard as you may believe.

I always whack mine with a chef's knife and twist, but no matter what I'm doing in the kitchen 100% of my focus goes towards what I'm doing since I'm cutting towards myself, technically.

That is how you should pit an avocado, yeah. Realistically you don't need to whack the pit that hard to get the knife to stick in, certainly not hard enough that you would hurt yourself if you missed. It's about as safe as you can cut toward yourself. But you should still pay attention.

You're not tenderizing meat here, there's no need to put any real force into the chopping motion. You're just swinging the knife through air, and stopping before it reaches your hand. You aren't striking the pit very hard. If you somehow completely miss the avocado and strike your hand you would almost certainly be fine with a bandage, no lost time at all. It is technically OSHA because the guy should be issued one of those chain gloves so he can't cut himself. But nobody wants to wear these things on a line. In prep or if you're working with a slicer, sure, maybe. But not for pitting an avocado.
