If you butterfly, dry brine, and dry-age a turkey for four days in your fridge, then roast it at very high heat juuuuust to recommended temp minus ten degrees, then rest it for thirty minutes under foil to hit temp and then come back down, the result is very much like ham. In the best possible way, I mean. Salt and sugar from the dry brine permeate the flesh, which takes on a faint translucence and spring from the drying process. It has a very distinct "cured" texture and flavor that doesn't really resemble the classic Thanksgiving turkey, but will engage the piranha impulse in your guests enough to leave you with a squeaky-clean carcass for tomorrow morning's congee. Even if you put sage leaves under the skin and they end up looking like weird turkey cancer.

My enduring conception of turkey is the one time I went to America as a young child, a man on the street corner was selling whole roast turkey legs, I was given one and I remember it seeming to be about the same size as me. Considering I also went to disneyland that trip and the turkey leg is the only thing I remember I think it's fair to say that just roasting a drat turkey leg is all you need to do to it in my book. Turkey's a fine bird, you just have to get one that's not tiny. Much like someone earlier said all ham tastes like is salt, you just have bad meat. We used to get turkeys from a guy who fed his day-old timbits. Now there was a turkey. Took like ten hours to cook. I miss working in the country, there was a lady who raised heritage pigs and their ham was so delicious. Cattle, too, for good beef. Chicken that tastes like chicken! In the summer they'd make chokeberry jam from the swamp berries, and rhubarb in the spring.

I still remember so wistfully my grandma's home cured hams. Not salty in the least. She never got a chance to pass her cooking secrets on to me Its been so long since she died, and I have never again tasted any ham that have come close to her way of making fresh hams except for HoneyBaked.

My dad bought turkeys once from the co-op. They ran wild on our farm until about 2 weeks before we slaughtered them and then we fed them grasses they liked and grain until the last day. They were loving amazingly delicious, only surpassed by some real wild turkeys a dude shot on our land and gave us a breast as a thanks. Real turkey is intensely good and awesome to eat, better than you can ever imagine until you taste it. Store turkey is bland crap. I don't even like turkey anymore, that's how good real turkey is. It'll ruin you for life. I mean, real chicken eggs are good but I can still eat store bought sweat shop eggs. I don't want to eat real chickens that live in the dirt or real cows because it will gently caress me up. I've had moose and venison and I have no idea how we haven't farmed them into blandness by now, they are delicious as hell.
