Other methods can make as good or better coffee but you need more expensive beans, more expensive gear, and a lot more effort to brew it.

Cold brew owns and is definitely different from just iced coffee. Coffee undergoes chemical changes both as it heats and as it cools that makes it kinda unpleasant chilled. Since cold brew never goes through the heat > cooling phase it comes out way smoother, nixes the bitterness of iced coffee, and neutralizes a lot of the acidity normally found in a blonde roast due to how it's made. poo poo owns but sometimes you just want a hot cup of coffee. Then you buy a keg, a nitro setup, and a stout tap and make your own nitro cold brew at home

I've always wanted to make my own latte's but I could never find anything equivalent to the steam wand on a $24k Starbucks super gently caress off industrial sized machine. Do such things now exist independent of an espresso machine attachment?

To heat and dispense the steam, you'd already need around 80% of the parts of a cheap espresso machine, so no one bothers making a standalone steam wand, as far as I know. There are "milk frothers" that sort of do a similar thing once you've already heated up the milk some other way, but it's not quite the same thing.

To continue the coffee-chat derail, if you don't want to spring for a cheap espresso machine with a steam spout, you can make bootleg steamed milk and/or foam in the microwave. Put the milk in a jar, nuke it for 30-60 seconds or so, then shake. Not quite the same but it will do if you're avoiding buying a proper machine.

Definitely better than starbucks and the milk frother is quite good. Traditionally I use garbage-tier coffee for this but if you got really good coffee then obvs its gonna reflect in your final product and you can tone down the other seasonings. 1 freshly grated nutmeg 1 pinch of cinnamon or like a third to a half of a stick grated. 1-2tbsp of vanilla bean paste 1-2 tsp of salt depending on your palate and emotional state. Seriously. Just enough salt that you say to yourself "okay, thats a loving weird amount of salt to add to coffee" and then you stop. Add water (filtered if you got it, tap if ya dont) while stirring continuously. Forget about it on your countertop or in a cupboard for 2-3 days depending if flavor or caffeine is more important to you, respectively. Strain it out once through a chinois to catch the coarse grounds, and a second time through a filter on the chinois to get the sludge. You'll notice after a minute the final product will develop a visual gradient toward a transparent oily meniscus on the top. this is almost pure caffeine and means you did good. Stir that up before pouring. Take a generous portion of milk or cream with it (soy milk is good too), even if you usually do not.

I very, very rarely drink coffee. The other day I had a couple of cold brew coffees throughout the afternoon and ended up not sleeping for about 36 hours. Not even a night out at the bar and an afternoon of surfing did much to tire me out. That's my story about cold brew.

I hand grind my beans every morning for my clever drip because I like tasty coffee and also am a crazy person. I like this thread but I don't have anything to contribute about retail. Maybe I should open a coffee shop, seems like there's good money in it.

I honestly don't understand why anyone gets involved in retail. Unless you're a huge corporation that has the warchest to do all the horrible poo poo needed to defeat your enemies and drive them out of business in the long run it's extremely hard to survive out there outside of certain niches. My friend moved from the city to some middle of nowhere town to run the only restaurant in town because he married into the family that owns it. As part of the deal he was able to get his dream of owning his own cafe, they built an addition or something off the side and now the family owns the only restaurant and only cafe in town. They are doing well because they're the only place in town, and it gets a ton of tourist/through traffic and my friend actually knows what he's doing. But theres absolutely always the risk some garbage chain like Tim Hortons or something will open up across the street, but even then I think he'd still survive because most of the coffee chains sell pretty undrinkable coffee.

any kind of foodservice is murderously difficult to make money in unless you find a legit niche or you're incredibly skilled at running a restaurant. here in atlanta there's a widely successful popsicle startup that's branching out as a conglomerate because they identified "local hipster popsicles" as a narrow but untapped market

I went to the farmer's market in my neighborhood this weekend and bought some food from a falafel truck. I tried to buy a soda (shown on the menu) but was told the market rules disallowed them from selling anything they didn't make themselves. What the hell kind of self-hamstringing is that?

If you are in a large metro area, the farmer's market rules could be because of incumbent businesses not wanting competition. In Washington, D.C. food trucks were incredibly popular downtown. You could get a decent meal for $5 and they usually included drinks at the same price as convenience stores. They would come and park in parking lots or side streets near the huge office complexes downtown at lunchtime. A bunch of incumbent restaurants eventually sued and lobbied the city to add new rules to food trucks under the guide of "safety" and "fairness." - Food trucks could only park in "designated food truck zones" that were about 10-15 minutes from the office space (the $14 salad places were all buildings right next to the office) - Food truck owners and operators had to pay for criminal background checks for all employees and take a food safety course to get licensed. - Food trucks had to accept credit and debit cards that automatically collected sales tax. - Food trucks couldn't offer a cash discount - Food trucks couldn't sell fountain soft drinks - Food trucks could not sell at farmer's markets or in parks - Food trucks couldn't sell any non-beverage item unless they "substantially improved or altered it" or made it themselves. This was actually the compromise solution. The restaurants wanted to exile them to "the bad" parts of D.C. outside city limits or only after 6pm. In DC, they eventually had to ban "zone change" fees for cabs. You used to be charged a certain amount if you changed "zones" during your trip. They broke up the city into several distinct "zones" with cab service. It was to compensate drivers who had to go out of the way and might not be able to pick up a return fare on their way back. Cab drivers would zig-zag up and down with tourists and "zone change" 4-6 times on a trip that required 0 to 1 changes. This could jack the price up as much as 40%. When the council banned zone change fees, they added a new minimum fee that cabs were allowed to charge because people bought cab medallions with the expectation that they could make a certain amount of money by ripping people off and needed to be compensated for that price they paid. Uber has taken the broad abuse that was spread out over thousands of passengers and concentrated the abuse onto a few hundred drivers.
