I don't think it's based on one specific place, but large dining chains with generic food and "quirky" "fun" practices (think T.G.I. Fridays and the pieces of flair, Joe's Crab Shack and making the staff line dance) that rob the staff and customers of their dignity. That said, the other day I read the last Achewood strips (i.e. everything from the Achewood High arc on ) and was cruelly reminded that Onstad just started running on empty at some point. His trying too hard to come up with Achewoodian dialogue was especially sad to watch.

I don't remember its name, but it wanted to give you half-gallon margaritas and the entire place looked like the decorating budget was 80,000 Skee-Ball prize tickets.

I just recently learned that Onstad wrote the cookbook after finding the French Laundry Cookbook useless. I looked it up and good grief, the first recipe is salmon tartare in little cones that a zillion people have been reduced to tears trying to make.
