I had something today in Pasto, Colombia that was tasty but not pretty. Platano maduro con queso y bocadillo, that's a ripe plantain, stuffed with cheese and guava paste, then baked.

It’s just a rice paper sheet like you’d use to make Vietnamese rice paper rolls. It’s probably ~fusion~ Edit: haha, I’ve actually read the tweet and he made it hard on himself by loving around with starch to make the transparent wrapper. I think Barry Lewis is doing interesting stuff with food. Some odd part of me really enjoys the idea of eating see-through raviolis and clear french fries. Dunno, I find a transparent corn taco exciting. Probably not one made by some Brit though. They have terrible ideas about Mexican foods.

Korea's done a decent job catching up, their stuff isn't quite as Instagrammable but occasionally Japan makes a mistake and produces a dessert with flavor. For what it's worth the cheesy plantain boat (thanks Fleta for that excellent description worthy of a terrible '60s cookbook) was genuinely good. Slightly salty from the cheese, sweet from both the ripe plantain and the guava, tart from the guava, and savory from the cheese and the plantain, surprisingly balanced. I'm about to cross the border into Ecuador today, will keep an eye out for AFP for the thread. But before I go, I thought I'd share something from a previous trip.
