So I used to work at a major food safety testing laboratory specializing in IDing e coli, listeria, campylobacter, salmonella and others in leafy greens, ground beef, nuts and other foods. It's been several years, but I did work through several of these sorts of outbreaks, including pistachios, peanut butter and a few others. Most of the day to day work was in early detection (satellite labs in food processing centers), reconfirmation of positive results, genetic tracing of outbreaks and consulting work to prevent further outbreaks. It's amazing how stupid these issues sometimes are. Back when all the pistachios were taken off the shelves in the USA several years back, the outbreak was due to the fact that the main processing plant in Salinas have two buildings and an open air conveyor belt carrying the nuts from one side to the other. They didn't realize the birds were eating the nuts and making GBS threads all over the place. AMA.
