If a pizza or Italian place's tomato sauce isn't vegetarian that's probably why. It's got ground up anchovies in it. Also if the texture of anchovies bother you, try capers. Similar effect less weird texture.

really late to this particular question but yeah chicken and waffles originated in harlem as a result of jazz musicians getting out of the clubs at crazy hours when it was kinda too late for dinner and kinda too early for breakfast. my source is a friend who’s kinda like a surrogate granddad and has spent like close to eight decades up and down the east coast. he’s got fascinating stories about stuff like learning to golf by caddying at country clubs before segregation ended, army duty in savannah and seeing things no one believed until midnight in the garden of good and evil backed him up. as someone living in a society it’s so neat hearing firsthand about how dramatically it’s changed
