Made bacon kimchi fried rice for the first time over the weekend. Shouldve added more kimchi tbh but it was still pretty good.

Last night's dinner was exciting because:

1. Using a rental house on vacation
2. No pizza stone or steel
3. No shredded mozzarella from any of 4 stores
4. Power went out just after oven preheat and never came back
5. Outdoor grill was unprotected from the strong gusts of wind and rain

Despite / because all that, I think it was the best tasting pizza I've had! Kale salad was good too. Headlamp light isn't the best for photography.

These were pre cut slices but I scored the fat, seasoned with salt, pepper, and whole cumin seeds, cook for 1 hour at Gas Mark 2 in a covered dish. Then take the cover off, add around 15ml honey and cook for a further 20-25 mins at Gas Mark 5-6.

For the croquettes, I used two medium potatoes (red rooster potatoes iirc), 1 small leek, 1 spring onion, and 5-6 chestnut mushrooms, cooked off the leek/onion/mushroom with a little of the pork fat that had rendered out.

Mix that all together and chill, should make 6 roughly egg sized croquettes. Flour, eggwash then bread (I used panko breadcrumbs but any would do). Add some flour if the mix is a little too wet. Fry for 5-6 mins.

The gravy again I used some of the rendered fat to cook off half a finely sliced white onion, made a roux and added some stock, then filtered the onion and any bits through a sieve.

Wanted tofu, too lazy to fry, so trying out baked. Looks good so far.

I've never been able to do anything with tofu despite loving it whenever I have it at a restaurant. Whenever I make it, it still tastes like cardboard. What's some good ways to cook with it?

I like to fry it, then toss it in last minute in a stir-fry so it gets coated in the sauce but doesn't get soggy.

Fried or baked to crispy then tossed with a little salt and pepper makes a real good simple tofu. Smeared with a little good miso is also great.

Made shepard's pie tonight. Beef though, not lamb, my local grocer doesn't carry lamb so I don't bother.

Not the most photogenic dish but it was sure delicious.

I got a new grill and put it together yesterday, so time to break it in/celebrate!



2.5" prime cowboy steak/ribeye




Wagyu Tri Tip.





Smoked the ribeye to 125, let cool for 10 minutes then blasted on the super hot grill. Trip tip was cooked low on the grill the whole time, basted with garlic and rosemary butter. Grilled some asparagus and tossed it with lemon juice, and grilled some mushrooms, basting with the same garlic rosemary butter as the tri tip.

The thing that interests me most there is the grilled mushrooms tbh. Not that the steak isn't brilliantly cooked. Grilled mushrooms though oh my god.
