Bad for risotto? I don't have an instant pot, I have the Breville Fast Slow Pro™, which is a wonderful pressure cooker that makes fantastic risotto. The recipe I've used for it is a pressure cooker mushroom risotto one. It comes out perfect every time without any busywork. I think pressure cookers are insanely superior to the laborious traditional risotto. I use it for primarily just a handful of recipes. https://www.seriouseats.com/recipes/2015/04/pressure-cooker-fast-and-easy-chicken-chile-verde-recipe.html https://www.seriouseats.com/recipes/2015/11/pressure-cooker-ragu-bolognese-sauce-italian-recipe.html https://www.seriouseats.com/recipes/2015/01/quick-and-easy-pressure-cooker-chicken-lentil-bacon-stew-recipe.html https://www.seriouseats.com/recipes/2015/01/quick-and-easy-pressure-cooker-chicken-black-bean-stew-recipe.html https://www.seriouseats.com/recipes/2016/10/pressure-cooker-beef-stew-recipe.html https://www.seriouseats.com/2014/12/presure-cooker-mushroom-risotto-recipe.html I make that set of recipes, probably at least once a week. The first one, the chile verde chicken, is the easiest recipe I've ever known. Rough chop a few things, throw in cooker, basically done. It is like my goto gently caress everything I don't want to cook but I have to make something recipe and it's delicious. I've made a few other things once or twice, including these two: https://www.seriouseats.com/recipes/2016/08/smoky-barbecue-bbq-beans-recipe.html https://www.seriouseats.com/recipes/2016/01/pressure-cooker-french-onion-soup-recipe.html (pressure cooker carmelizes onions with no tending, but your pressure cooker will smell like carmelized onions forever. It doesn't really impact other things though) The thing is amazing at cooking beans. I also make stock maybe every three weeks with it. It is of course amazing and fast at making stock and the stock is higher quality than what I make on the stovetop. |

I definitely use the pressure cooker more often than my sous vide machine. Which is basically nowadays just my 'chicken salad machine'. |

risotto is the worst kind of effort-rice and definitely never worth making the old way imo |

I just had issues with the instant pot absorbing the broth into the rice without it getting too mushy. Might just be a matter of playing with ratios.
|
# ? May 21, 2019 17:25 |
|
You can typically go closer to a 1:1 ratio with liquid to rice in the insta pot |

The other night I made an herb-rubbed roast beef with some garlic asparagus and pan-roasted rosemary potatoes. In the back there you can see a horseradish sauce I made to go with the beef The wine is a Valpolicella ripasso superior ignore that one little tater on the left that got a bit too much heat ---------------- |

Oh also, I have a functional cooktop again yay! We had an electrician come out and doublecheck things and its all fine so the Bosch repair guy was full of loving poo poo and came up with some BS. We did not get Bosch this time. And we got a 5 year warranty. I like the new one more; the burners have texture so the pan doesn't slide off easily. |

Resting Lich Face posted:Requested kitchen porn. Holy poo poo is that an articulating faucet above the cooker so that you can fill pots with water right on the stove without doing it in the sink?? Because I have seen a lot of cool kitchens but I have never seen that and it looks awesome! And also you'd need to wash it like every day which would be less awesome. Also where does the water go if it leaks, or you accidentally turn it on, other than everywhere? |

Got high and I'm looking at articulating faucets online because this weekend seems like a good time to totally gently caress up a plumbing project |

I gotta think putting water source directly over a high power electric device has somehow got to be against fire code or not electrocute yourself code or something, but I guess if it's got a GFI breaker or something and the electrician didn't raise an eyebrow its probably fine. |

Having a faucet above your stove is amazing. Who wants to carry a huge stock pot of water four feet from the sink. Nah. Every kitchen I worked in had a faucet by the stoves for this reason. (All two of them) |

I love my induction stove but I will never, ever own a cooktop with capacitive buttons ever again if I can help it. Theres just a bunch of prime real estate at the front where you can NOT put down a lid or a spoon or god help you if something boils over and reaches the control area the whole stove panics and turns off, and if not the buttons will become unresponsive. Same if you try to wipe it while in use. This is stupid, give me a drat mechanical knob please |

Hey what should I do with these canned clams that isn't "put them in pasta!" or "soup!"? I'm thinking paella if I can get the right kind of rice. Think I can use carnaroli (risotto) rice? I've got an ancient can of it. |
