I am really bad at making rice and I always gently caress it up. I have an instant pot with a goddamn rice setting and I still gently caress it up. I lived in various east Asian countries for 8 years and I still can't cook rice for poo poo. (But I can roast a chicken in a toaster oven!)

With the 'rona I haven't been swinging by Kroger for sushi and fried chicken, so I figured I'd lift the roommate's spirits with some fried chicken. I've succeeded at it before, but not this time. On the other hand I avoid baking, because I can't bake anything that's not from a box. I don't know what I expected to happen this time

I've made instant pot rice for a few years now, never has it been crunch, it doesn't stick to the bottom. It's one button and it works great. I've used rice cookers in the past and just in a pot, instant pot makes great rice, not sure how you've not had this result.

If you're cooking rice with any regularity there's no reason not to have a rice cooker. Even your simplest $20 Walmart model does the job perfectly well. For Japanese style with short grain Japonica rice: Measure out rice by volume. Wash rice in a sieve. Let the rice sit in the sieve and dry out a bit, half an hour or so. Alternately, if you want to make rice that will stay soft when cold for something like onigiri, soak instead of drying. Either works fine. Place rice in rice cooker. Salt rice. Get horrified looks from anyone in East Asia but they are wrong, salt all foods appropriately including rice. Add water. I always go for roughly 1.1 times the rice volume, but every bag of rice is different and you may need to adjust. So for 400 ml of rice, ~440 ml of water. You do not need to be super precise. Swirl to dissolve your salt. Turn on rice cooker and go do something else. Voila, good rice.

You'd really have to be grinding it against something hard for some reason. I have a purpose built rice washing/draining bowl I picked up in Glorious Nippon but there's no need for such things. You can just use a bowl too but I find it very annoying to drain the water out without spilling rice so I don't bother.

When you break rice grains, you release more starch from the kernel and undo your work. It's not a huge deal, but if you caveman it hard enough there will be a noticable difference in stickiness. I put water in a saucepan and put it on the stove, then when it's hot I put rice in it. When the rice is cooked I tip it through a strainer to get rid of the extra water. This works perfectly 100% of the time and requires no specialised tools or measuring.

if it was a sticky lump then sure rice varies like 5x in amount of starch expressed during cooking. too much, its more of a rice like lump really best bet is buy a midrange zojirushi, read the fuckin manual and follow it exactly. and don't forget to buy the right kind for your needs if you have time and just generically want a starch, not rice specifically, you can make like the nth century bc chinese peeps and make rice cakes instead. do soak the rice overnight for that one, that's important bob dobbs is dead has a new favorite as of 06:25 on Apr 20, 2020 |
