That's the ratio I use yea, if it's all sloppy and goopy I would say less water but I'm guessing you tried that already.

Good rice cookers come with a measuring cup and marker lines inside the bowl.

In general, water should be 1 fingertip above the rice (1.5cm, 3/4 inch).

5. take the lamb out and keep a bunch of the liquid. you will use this as the rice cooking water.
6. slice up onions + some garlic
7. start rendering the fat you saved in a pan, throw in the onions and garlic and fry the poo poo out of them over low-ish heat for a while.
8. once they cooked turn up the heat and add the lamb pieces just to sear the outside. you can skip or add the bones with the rice if you had any.
9. add a ton of cumin, pepper, some salt, maybe some soy sauce and whatever else you want at this point for seasoning. i think cumin is the only rule. i added a bay leaf last time. it was annoying to find when i was done.
10. once you mix it all up add in like 450~ ml or so of the lamb water we made earllier. let everything simmer for like 15 minutes or so.
11. add in the carrots and raisins if you want, and then the rice. you want the rice to sit atop all the other stuff in one layer. you also want about as much liquid so that its even with the top of the rice. you may need to add more, you can just add water if you dont have lamb water any more.
12. peel the outer papery layer off a bulb of garlic and place it on top of the rice. also poke a couple holes in the rice layer with chopsticks or something.
13. cover and simmer till the rice is done.
14. open it up, remove the garlic and mix it all up.
15. very important: **do NOT RINSE THE RICE**

the garlic will have become v soft in the cooking process and you can open up each clove and use it as a spread.

also after step 10 you can move to a rice cooker/pressure cooker/instant pot (if you have a sautee function on it you can do everything there!!!) and it will also work.

Perpetually a Pain.
Different rice types use different amount of water.

A lot of long-grain rices start at 2:1 and the water ratio just increases from there, while the calrose rice I've been enjoying for the last six months or so is pretty much 1:1, just for instance.

Definitely can't just assume, fortunately we have the internet so one can check how much the ratio should actually be.

Unless there is an extremely subtle joke I'm missing about Uzbeks all moving to central Germany I think you posted the wrong picture.

when i lived in shanghai there was an amazing uighur place just down the street and we'd go and just get this massive thing of mutton that was amazingly tender and delicious. other stuff too but i mainly remember that mutton. hope they're doing well these days...

edit: looking on baidu street view it seems to have been replaced :smith:

i also seem to have missed weed chat but when i was there i somehow found some other uighur folks who i would text and meet up with to exchange cash for pretty good hash which i would then either smoke and get very paranoid or just eat

one of the dumber thing i ever did was to make this trade while walking down Yan'an Dong Lu (in Jing'an district) in front of a police station and i fumbled the cash. hah...

The best rice cooker I ever had was some $5 junk a friend gifted me as a joke housewarming gift. It was basically a plastic bucket with a lid but the rice was perfect every single time, as if imbued with a magic that only the roadside Kentucky flea market he bought it in can provide.

So idk how far you are from i-65 but get driving pal, the BPA laced rice of your dreams awaits...

Do yourself a favour and get a proper aluminum inner surface instead of non-stick so you can actually clean the thing if / when a batch sticks.

I once cooked orzo in my rice cooker and it turned out pretty darn okay. Just needed to fluff it. I've also tried alphabet pasta in there, that turned into a sticky mess but I definitely got the water level wrong.

I have one of those old lovely rice cookers with a magnetic switch, a single metal bowl and glass lid and no fancy presets or anything just an on off switch. Been using it for over a decade. Done rice mixed with meat, rice cooked in broth, rice cooked in fatty broth, rice cooked with fatty mince, etc.

But what you really want is a good claypot so you can make yourself some claypot rice in the winter. Don't feel the need to stick to the usual mushroom and chicken / Chinese sausage mix, try it with anything. You can do it over any old burner just fine.

As for beef noodles, a part of it is the broth itself, it is hard to get that same kind of flavor at home compared to a restaurant that has that simmering forever stock to pull from.

The world isn't multi-polar. There is no Soviet-esque "China bloc" and China has no allies aside from North Korea. It just turns out that you don't actually need to be a superpower to cause massive problems for the international system

Even North Korea is kinda iffy. They rely on China for imports but at the same time they've always maintained their distance politically and militarily. Almost as soon as the war on the peninsula was over Kim Il Sung started (correctly) viewing Mao and the CCP as threats to his independence.
