If you want a project you absolutely cannot do safely in a normal fashion that...will be safe but may disgust you because your brain is programmed to think it won't be safe: Medium rare chicken. Also you can get those giant fat rear end breasts prepared perfectly by sous vide like you're used to, which is a huge pain in the rear end trying in any other fashion.
