I recognize this is a very dumb question, because the risks are clearly spelled out in these videos, but selling options still scares me so I'd like some reassurance. Like, I know it lowers your potential gains, but it surprises me so many people lose all of their money when there are methods like this to protect yourself.

Yes your wins and losses are clearly defined. It can be hard to trust and make the calculations on the fly at first, so I recommend visualizing things with https://www.optionsprofitcalculator.com/ before you make a trade. In fact everybody who is new to options should use this, spreads or not.
