Because it's not actually obvious to everyone. And because it makes a point that your castle analogy doesn't: that you have to analyze the specific shortcomings of each layer to make sure you're actually adding to your defense in depth, rather than blindly adding additional layers of protection that actually let the same problems through. This is an entire field of study and you're nitpicking at, like, chapter one of the introductory textbook.
