I'm practicing making brown sauce and potato mash. I'm happy with the potato, but the sauce got a bit thin and then I added flour to thicken it and got lots of flour lumps instead

You want to mix the flour with either liquid or butter before stirring it into the sauce.

Selklubber
Jul 11, 2010
yeah that sounds like a reasonable idea, it's always harder stirring it out in a lot of liquid. Maybe ill try putting it in a pasta sauce jar or something and shake it until its even

make a roux first: melt a small amount of butter and incorporate the flour, then add the liquid to that until it's the right texture

I got some celiac family members and switched to corn starch. Bit of a glossier texture but you can add a slurry directly to the sauce while you're cooking, just be sure to only add a little at a time, and give it a moment to emulsify before adding more, a little goes a long way.

Is it weird I use instant potato’s instead of flour for gravy?

I've heard a lot of people using instant potato as a thickener. Not weird, unsure if it really matters for recipes

Potato starch or cornstarch are both fine ways of thickening a sauce. Just mix a little in a small bowl with an equal amount of water, then add that to the sauce.

If you knead warm butter and flour together you can add it to the sauce and it will thicken like a roux. Or just use cornstarch+water like Swizzler said

It's a refrigerated drawer unit for a commercial kitchen. You can watch the whole video here:

Restaurant kitchens use these types of units on the line to hold everything, and this is a pretty typical state to see them in.

Right on, the kitchens I've worked adjacently to have only had reach-ins and shelving.

Well don't you know I'm caught in a trap?

Doing maintenance on commercial kitchen equipment will make you not want to eat out. Even outwardly very clean places tend to accumulate this mix of congealed fats and cleaning products that will give you chemical burns in concealed and uncleanness places.

My first day working at a restaurant [now long closed, thank god] I was mopping and some mop water went UNDER THE WALK-IN COOLER [note: this is not supposed to be possible, walk-ins should be utterly watertight] and a whole bunch of wriggly little wormy things washed out.

I went to Epcot a little while ago and on the new Ratatouille ride there's a bit where you're scuttling around on the floor of the kitchen and avoiding all the chefs stomping around and trying to herd you out of the way, and you dash under a sideboard and this one chef thrusts a mop at you and as it hits the gap under the sideboard you get spattered with mop water.

The people I was with were like "OK that actually kinda grossed me the hell out"
