make a roux first: melt a small amount of butter and incorporate the flour, then add the liquid to that until it's the right texture

I got some celiac family members and switched to corn starch. Bit of a glossier texture but you can add a slurry directly to the sauce while you're cooking, just be sure to only add a little at a time, and give it a moment to emulsify before adding more, a little goes a long way.

Potato starch or cornstarch are both fine ways of thickening a sauce. Just mix a little in a small bowl with an equal amount of water, then add that to the sauce.

I went to Epcot a little while ago and on the new Ratatouille ride there's a bit where you're scuttling around on the floor of the kitchen and avoiding all the chefs stomping around and trying to herd you out of the way, and you dash under a sideboard and this one chef thrusts a mop at you and as it hits the gap under the sideboard you get spattered with mop water. The people I was with were like "OK that actually kinda grossed me the hell out"
