I figure it's best not to translate them when they refer to a specific Japanese food (especially when the word is used in English) since translated or not it's still set in Japan. I can see localizing the money from a reader friendliness perspective though.

You could use Japanese transliteration with the anglofied translation in brackets, e.g. ramen (noodle soup). Or the translation in a footnote.

What Tony is cooking/eating is one of the most important parts of the plot, so I'm going to be as accurate as reasonable and just link to a description if I need to. Maybe it'll even encourage some of you to try the new dish. Even I didn't know about chawanmushi until this panel. "Steamed egg custard" is less specific, and I still would had have needed to look it up anyway, so I saw no benefit to it.
