A) Get the remaster.
B) I love FFVIII so very, very much please do not skip it.

I think out of all the FFs I have played (1GBA, 7, 7R, 8, 9, X, X-2) that the mechanics of the battle/draw/card system are the most interesting and come with the funnest way to get beefy via Triple Triad. I am serious when I say it is great, great fun, has some bonkers storyline, some killer music and the joint greatest minigame in the FFs (that I have played - the other one is in 9). I also think it has the best final dungeon.

Thanks, I'll grab the remaster! I think I've played the first few hours on PS1 several times but I never got past the sewer level.
