At what point did Kinnikuman/Ultimate Muscle stop being a superhero parody and start being almost exclusively about wrestling (also why)? Also does the anime adaption include any of the former?

Ultimate Muscle is actually an adaptation of Kinnukuman Neo, about the son of the original, so has very little of the other shenanigans. And then it becomes questionably canon when the original series was continued, and characters alive/dead situations stop lining up with Neo. As for why... It was probably around the time pro wrestling started getting mainstream-big, and while superhero parody had been around, wrestle-parody with a side of 'no but it really is real' was just getting started!

Yes, and the first episodes adapt the general superhero joke stuff before the beginning of wrestling times. Well, the beginning of being exclusively wrestling times, Kinnikuman has always been wrestling. Terry Funk shows up like seven chapters in and becomes a permanent supporting character.
