I always remember a line from a book where the narrator opines that most good cuisine originates in starvation. It wasn't French nobles who invented escargot, it was the peasants who they oppressed who at some point had nothing else and gambled on it. Then they figured out how to make it taste good, then the nobles made it fancy and expensive.

I've had escargot. Taste exactly how you expect snails to taste. Same with ox tongue/ox tail/duck feet. Just going to put it out there, a lot of food people only started eating because they didn't have much choice, well there was a reason it wasn't being eaten earlier.

Yeah all those things are awesome, give me a catfish fry Escargot was good though, I had it recently for the first time. Didn't come in the shells, in the little ramekin thing, but they were good. Pleasantly chewy and a kinda briney flavour

It's usually cod (as a standard), perch, bluegill, or walleye. Each has their perks (I'm kinda done with cod these days though). Catfish is where it's at but it's rare up here. I've only found it maybe 2-3 times at a local place.

Oh yeah I've had my share of fish fries, I moved to WI a few years back, also grew up in western Illinois. My buddy's high school graduation was his dad just doing a massive fish fry. I ate too fuckin much but it was worth it. I'll never tire of bluegill

Man, I never knew WI was the only place Friday Fish Fry's were normal. I thought it was country wide. Well, that sucks, it's one of my favorite dinners. Why the hell isn't this normal everywhere else, it kicks so much rear end. Edit: Wait, I was down in Texas and they had them on Fridays at the VFW.

They were all over the place when I grew up in Illinois, catfish and/or other panfish. They seem pretty common in that general swath of the country, I haven't really seen them since moving further west.

Culvers is brining back their massive cheese curd burger. I haven't had it but I want to try it because whenever I'm there I order a side of curds anyway. As far as I know the cheese is under no pressure and won't explode on you.
