I think I've got tomorrow's afternoon of cooking and not working all planned out. I'm going to make a little shallot oil (I've got a little but you can always use more) and then some leek-carrot-potato soup, and to top the soup I'm going to use some of the toasted shallot from the oil and also fry some potato shreds in the oil. Making seasoned oil takes a long time because when (for example) you're frying shallots, the pool of oil doesn't get much above the boiling point of water because the water in the vegetable matter is still boiling out. I mean, you could heat it up way hot first but that would be insane, and you want the cooking process to be slow. When they shallots lose almost all the water then the oil starts heating up pretty fast, and that's when you have to be careful because you want to get the shallots out at about 265 degrees F (maybe a little more) or else the sugars will burn. Shallot oil is insanely delicious btw. So is home-made chili oil.
