I could probably do the pixel one, it would definitely take a long time. I just finished my night sky puzzle, and now I'm on to this one for the second time. 1500 pieces: I've definitely been called insane by friends when they realize I put the box away and don't look at it while I'm working on it. They get frustrated by proxy.

I guess you can do that with the pixel one, but hunting through all the pixel colors just seems like a pain compared to looking around someone's artwork.

You can set difficulty from 4 to 1600 pieces, and after you see the original picture you can't see it again without clicking a button to show it to you. Kills time in waiting rooms or waiting to pick my kids up from events. If you're okay with doing puzzles on your phone instead of having the physical pieces in front of you, you might like something like that. I love puzzles but don't like all the space they take up (and can't keep kids, dogs, or cats from messing them up while I'm working on them).

It would be cheaper than the super bowl and it would probably go a long way to making up for it. I don't know what her schedule is like but she's got to have a concert in vegas at some point I assume? That said, given that the kid is 7, you could probably offer to pay for her to have all her friends over for a watch party of the movie when it hits Netflix in a few weeks and that would help make up for it. That would probably run you a couple hundred bucks tops and still really serve as a nice gesture.
