A 1 kilo batch of dough is a 222g/222g water/flour pre-ferment blob for a day, then that plus 222g/333g water/flour additional for the dough (with salt and yeast of course). In my weird Sweidish mixer designed by a crazy person it comes out perfectly. I've been using a mix of bread flour, fine-ground semolina, and whole wheat.
