V700 is the standard recommendation. Good scanners are never really cheap.

The problem is that after a while your eyes will be close enough that you need an actual meter to improve on them. Before that point they're kinda handy.

If you're going to shoot color/slide film (and you should, because medium format slides are amazing) I'd recommend the better coatings, yes.
