A real question I have is, is your kickstarter actually going to be enough for you to even open the joint 5k is not a lot to start any business and you'd be surprised how quickly that poo poo goes down the drain. What are the other fund sources for opening the place, if any. What's the cost breakdown on the (potential) KS return

Sounds to me like you deliberately shot low on the KS to get SOME funding even though it may not be enough to cover the rest of your startup costs. Have you consulted BFC or A/T at all about running a ristorante
