On the plus side, Firewatch's seeking volunteer localization might result in one language's script just being incredibly offensive nonsense to get the developers in trouble, like that time one of the Minecraft translations replaced all the in-game text with racial slurs.

It was from that era before Square gave even the slightest poo poo about localization, so it was all translated by one guy, without an editor, in Shift-JIS so a spellchecker couldn't be used. The end results are charmingly wonky.

FF7 went on to sell way better outside of Japan than the SNES-era games, convincing Square to spend more time, money and effort on building up a proper localization department with the right tools and methodologies. This interview on the subject is worth reading if you're interested in such things.

The Shiny Matrix games were so... weird. They were ambitious in their attempts to replicate the feel of the movies in original scenes, and they did some impressive technological stuff like having bumpmapping and lots of Agent Smith clones on a PS2... but the end result was just super-lacking.

Actually, over-ambition and under-delivering was a general theme of Matrix game adaptions. Boy, the stories I could probably prod a friend of mine into telling about The Matrix Online...

Legends of Localization is a really cool site by a professional translator/localizer, where he details what changed in classic games and why. His FF4 section compares every translation of that game, including a crappy fan-translation, so it's sort of fun to see how different methods and levels of professionalism handled things.

Treasure isn't doing much of anything anymore, sadly. Their last original project (Gaist Crusher) doesn't seem to have done very well at all, their revolving-door policy means their staff are kind of scattered all over the Japanese games industry, and they don't really have the IP rights to port very many of their games to other platforms.

M2's Sega 3D Classics have tons of work put into them, even in just making them run nicely on a 3DS in stereoscopic 3D. They also actually do have extra content, although the Megadrive ones often don't have as much added as the arcade ones, for various reasons. Sometimes it's just cheat modes so people with time-blunted reflexes can see the whole game and the ending, sometimes it's whole special rearranged game modes with new music and bosses.

The Nintendo ones by Arika that came out at launch are pretty lame. I mean, poo poo, 3D Urban Champion.

The Sega ones are super-good. Here's a collection of lengthy developer interviews that go into everything that was done and what new stuff was added.

To use the above-mentioned examples:

3D Streets of Rage 2 adds a "Relay Mode" where you change character every time you lose a life (you select the order the four characters appear in), a "Casual Mode" where enemies die when they get knocked over, an optional CRT filter, the ability to choose between the US and Japanese versions of the game, and local Wifi multiplayer.

3D Gunstar Heroes adds an extra button to switch between Free and Fixed modes instead of having to commit to either for the entire game, a "Gunslinger Mode" where you can switch between all the weapons with the shoulder buttons, a "Mega Life Mode" that lets you start each stage with twice the normal amount of health, the ability to choose between the US and Japanese versions of the game, and local Wifi multiplayer.
