Basically a normal bullet is more like a needle, in that it can pierce through things like armor or walls, but only leaves a relatively small hole where it passes through. While a hollow-point is more like a hammer, in that it transfers more force to what it hits, but that force is spread out over a larger area so it can't penetrate as far. Maybe that's a terrible analogy, I dunno.
