So when do I get my mount as a level 80 going back through the old content? I got one on the alt I made within like an hour so I feel like I should be prioritizing whatever I need to do to get the basic mount.

According to the wiki, you probably don't (for now), unless you unlock any expansion. Looks like the permanent, account-wide raptor unlock at level 10 is only for expansion-havers.

Otherwise, each character gets a 10-hour trial raptor when they first hit level 10 (or the next multiple of 10, for older characters). Since your old character is already 80, you might get it by earning a spirit shard from xp or you might not get it at all.

I'm a little torn on what profession to play. I've never been a fan of Thief in GW2, so what I'd normally end up playing is right out.

Instead I was thinking Warrior, but I can't help but feel it's a bit.. bland? I'm torn on what else I might enjoy - but nothing really appeals. Does Warrior become more engaging at higher levels / more flashy?

Revenant or Guardian makes for a flashy Warrior, they combine magic effects and heavy armor. Engineer gets all sorts of things that go boom.

I was contemplating Guardian. I don't typically go for 'Paladin' types but it looks like it could be a little more engaging than a Warrior would be. Ideally something that can use two-handed weapons (GS / Hammer are good fun on Warrior) is a plus.

I love hammer on Guardians, even though it's not really part of their meta right now. They get a leaping overhead smash on a short cooldown and another attack that launches enemies into the air.

I am also playing this marvelous gem of a game

Considering Birthday dyes, should I just opt for the best looking ones for myself, or just get the most expensive ones to sell? Should get more than 100g if I sell, but wondering if gold in this game is a priority or not

Dyes received from birthday gifts are account-bound, they can't be sold.

Personally, I look up the birthday dye pack on the wiki (for example, here's the fourth birthday dye pack: https://wiki.guildwars2.com/wiki/Jubilant_Dye_Pack) and use my API key to see which ones I don't have yet. If there are any that I want, I choose one of those. Mostly, I just pick whichever one is the most expensive, on the basis that it saves me from having to buy it later if I decide to do something weird like a complete dye collection.

Regarding mount skins: are there any that make Skyscale or Griffon smaller? I always like flying mounts that take up as little screen space as possible, like flying discs or clouds.

According to the wiki, mount size actually scales with the height slider from character creation. So you could use a makeover kit to set your height and mounts to the smallest size. Assuming you haven't already, since you might also prefer characters that take up minimal screen space

I wish there was another way to get your hands on Glyphs for infinite gathering tools other than drop luck from BLCs or buying them at horrendous prices from the TP.
I don't mind G.o.Volatility only paying for itself after 28k+ strikes and G.o.Watchknight after 20k+ strikes, but the upfront cost of (at the time of writing) 650 gold (i.e. $ 40+) for three is intimidating for someone without thousands of hours in the game.

That being said, can someone recommend a cheaper glyph (up to 50ish gold) they found useful for specific ingame farming goals other than "additional gold per strike"? Right now I am eyeing Timekeeper and Scavenger.

Some of the cash shop gathering tools come with glyphs attached, which you can remove and put on other tools, if you want.

My personal preference is for Industry glyphs on my mining and logging tools, which generally allows me to land my skyscale, gather, and remount before nearby mobs can get a hit in. Given the large number of times you can find plants nearby each other, I use a Reaping glyph on my harvesting tool.

I approached 10 from the northwest and it triggered normally (ie standing on the floor) without aggroing, so I was able to go wax the spawns at 11 before coming back to 10

The EoD one is pretty good. Besides the regular cities portal (and "return to where you left" like mistlock and guild halls), the fishing zones portal can take you to something like 16-20 different maps. Jade bot workbench, fishing vendor, and the zipline to the fishing portal will charge up your jade bot.

Yay I failed over to the good thing!

I don't ever see myself as the guy with all the legendaries because A) no raiding due to timeslot and B) I left my tryhard endgame raider status in TBC-era WoW, so I'm happy just completing things and playing lots of classes/roles and stopping at pink gear. Once I have a handle on all of the mechanics I'll probably roll a second character for a more dedicated support using whatever is the FotM at the time.

Unless you particularly want the armor skins or ring visual effects from raiding, you can get legendary gear other ways. Armor can be had from doing a lot of WvW or sPvP, and the ring from WvW isn't unique, so you can make it twice.

If you WvW'd for about 4-5 hours a week, it would probably take less than 4 weeks to get the currency (Testimonies of Jade Heroics) needed for enough hero points to complete an elite spec on a character.

It would take a bit more net WvWing time if you tried to do it all in 1 week; the early tiers of the weekly skirmish reward track take less time to complete.

If you didn't care about doing the story in order, what would you say is the optimal route of unlocking the game and masteries to get the most important stuff unlocked on a fresh account?

I'd say probably PoF until you got raptor/springer/skimmer unlocked and upgraded > HoT until you got gliding and updraft and meta waypoints > EoD all the way to the end for globalization 30g a week and jade bot scavenger loot > season 4 > icebrood saga for drizzlewood and essence chests and grothmar events > season 3, particulary bitterfrost for filling in ascended trinket gaps > everything else for return achievements.

Am I far off on that?

I don't know when Central Tyrian masteries unlock these days, but I'd pause all that to immediately beeline for autoloot.

Jade bot cores and the other 2 upgrades are only account-bound and can be shuffled between characters, like gathering tools and most ascended gear. You just need to go somewhere with a workbench, like SFD guildhall or the crafters area on the second floor of Arborstone

As far as I can tell, the key to getting kill credit is to use anything besides the auto-attack. Hit them with the mount's engage or weapon skills 2-5. Autoattacking after that is fine

So I've been trying to work out "the usual thing" on a daily basis. So far I've got:

Do dailies.
Do EoD dailies.
Do daily T1+rec fractals.
Go hit fireworks to get festival daily.
Pray to the gods that maybe you score a group for a daily strike. If you get groups for both, buy a lottery ticket.
If a group for multiple non-daily strikes happens, go do that.

After that I'm kind of lost. Do ya'll just check the timers and roam the world looking for commander tags to hopefully get in on some metas? Do public strikes ever actually happen?

You might consider grabbing the World Boss Portal Device from the gem store. It's a free teleport to whichever world boss events are about to start, so there's always a thing to do.
