I haven't watched it yet to confirm but apparently it's
1) Monologue at the beginning is longer
2) Deckard's first line to Hobbs is changed to make sense now
3) Graveyard chase is longer
4) Rousey fight is longer
5) Kurt Russell fight is longer

I hate when they release box sets of movies that are in a series that is clearly not finished. Unless it's doing it like Marvel is with the "phases" or whatever. Because then when 8 comes out you just have this dumb tire and the next movie in a normal rear end case.

I liked how the James Bond one came with the extra slot for when Skyfall came out. Too bad there isn't a slot for Spectre.

I bought that thing without thinking, and am now smacking myself about it for just this reason. I still wish it had only come with the movies up till Casino Royale. Then I could have had classic Bond in a complete set, and neo-Bond on their own.

I'll double check when I get home, but I think it was only 2/3 full, maybe even only 1/2 full. There's only one extra disc and it's just a bunch of F7 promos and F6 interviews, nothing worth keeping.

That would be a set I would buy in a heartbeat. I love Dalton's Bond and On Her Majesty's Secret Service is a movie I've come to appriciate more over time.

On Her Majesty's is great if only for the ending. Blofeld gets beaten, and instead of just moving on to his next grand scheme he personally does a loving drive by on Bond and his wife. That is some straight up gangsta poo poo.

Wingard would be a good choice (though there's nothing to indicate how he'd do with a budget that big compared to his earlier works) I haven't seen The Signal and the other two choices hover between generic and bad.
