Didn't the 3.5 book about devils and the Nine Hells introduce an "upgraded/promoted" version of the erinyes called the pleasure devil which was basically just an excuse to have LE succubi?

I could've sworn in 2e that "erinyes" were just lawful evil succubi too, with no real connection to the mythological basis.

Making them more like the furies they were based on. Beautiful, dangerous and angry warriors. Starting in 4e they just turned Succubi into Devils, then in 5e they just decided to make them neither. Erinyes has some really sweet abilities that could create some dangerous encounters if you run into a group of them (provided the dm isn't a moron). Belkar once just murdered a random innocent gnome in front of Haley because he hadn't gotten to murder anyone in a while, then ate the guy's chocolate bar. It really doesn't matter if he finds a little depth and complexity in his character, he's not built for "redemption" outside of maybe being a special case for helping to save the world even if for selfish reasons.

Based on the section of Roy in heaven, Belkar would be judged by everything he'd done in life, rather than whatever alignment he might have switched to by the time he died. Which could make for some interesting plot points if he tries to atone or something.

On reflection, it might be a bit of a lost opportunity that the dead gnome didn't come back up while Belkar was in gnome town. If, say, he'd gone to dinner with that merchant only to learn her father had died recently on a trip around Azure City, that might've helped develop Belkar a bit. Not really any way around his lifetime of sins, though.
