Cajuns are descended from French Canadians so Cajun food is a genuine white people thing  New Orleans is Creole, not Cajun, though. Cajun is not Creole, which is what I was  about. They are distinct cuisines and ethnicities. Creole is heavily based on Afro-Caribbean and Spanish cuisines. Cajun is French/Acadian with local ingredients and influences (including, yes, African and Native American). There's plenty of examples of whites shamelessly co-opting minority cultures but unless you're arguing that Cajun cuisine somehow doesn't belong to the Cajuns...
