There's an entire tuner industry built on overwriting/supplementing that software. Replacing gauges seems trivial in comparison.

The idatalink maestro sort of allows that, it's a magic black box you plug in to interface a head unit with modern wheel controls. The cool thing is it can also hook into odb2 and certain head units (basically all the big names' touchscreen models) will make use of that data to show vehicle performance data on screen. So all you need to do is make a diy head unit that supports their protocol and uses your custom vintage UI!

That way when your hacked together Vector W8-lookalike UI crashes, you can still see that the check engine light is on.
