In Warsaw they use clams to monitor water quality. If there's a rise in impurities the clams close their shells and an attached device triggers an alert at the monitoring facility. Apparently they're more accurate and reliable than specialist equipment.

That's already happened at my kid's school, albeit with hot meals. A couple of times they have just not had food delivery due to shortages so a bunch of 4 and 5 year olds has had to either chew on a dry cheese wrap or go hungry.
