Its always just bland for some reason my true favorite dish is "Rama Curry" which is like panang but with peanut butter. the place i got it from put big handfuls of spinach in it and that peanutty taste with the wilted spinach was insanely delicious. I made a big pot of chicken curry but I didn't put in enough chicken. I'm think of grilling some more chicken breasts and adding them to the original stew.

I do this often enough. Just scoop out some of the sauce and keep it in a separate container as a quick snack. Curry sauce is surprisingly good spread on top of toast.
