little mac is a pretty easy character to exploit, there are moves that every character can do that he can't ever deal with. In regards to your ledge guarding problem vs him, if he's right on the ledge that you're hanging off of, press back (not down) and then do a jump into air dodge onto the stage, and then grab him. In the neutral, especially as falcon, you can get away with SH Dair spamming and the only punish he has for it is easily telegraphed and can be air dodged. captain falcon has a really low landing lag on SH Nair as well.

No, I don't think it matters much. The problem with fighting Sonic is that he has so few times that he's vulnerable. A lot of his moves have super armor or some sort of invulnerability, he has little endlag, I don't think his recovery puts him into a helpless state like most characters.

I would like to know the points at which it is safe to attack Sonic, when he's vulnerable to punishes, etc. if anyone knows them.

projectile characters can shut down his spin moves in which point he has to fight like a regular character, well timed tilts or arials on many characters will do the same thing. me asking which character they played would have resulted in me telling them which abilities can do this
