It's an interesting discussion because I remember in the first few seasons it often had overtly religious themes. Some episodes in particular, such as the one where Lisa fears (literally) going to hell because Homer is stealing cable, were pretty shocking to secular European audiences, and did a lot to cement the US's reputation as a backwards semi- Third World theocracy. A few seasons later and it was completely different.

There's usually a sort of Gauss curve with (worthwhile) entertainment products, where it starts out rough, they eventually hit their stride and enter a golden age (seasons 3-8/9 for the Simpsons), before inevitably running out of ideas and having the scenarios and writing become increasingly uninspired and self-referential.

The Simpsons is just unique in that the 'decline' period is now the vast majority of their run

I still like the first four seasons, they're a good trash watch. Not as good as peak Simpsons, but that's a high bar to set.

I didn't bother watching much of it after they brought it back, it got noticeably worse with even more contrived plotlines (the last one I remember is Lois suddenly being Jewish)

I happen to be rewatching the early seasons right now, there's some good episodes there (including the aforementioned American Civil War one). On the other, and even though I'm no delicate flower, the casual/extreme violence is kind of unsettling. I've always wondered how many parents unwittingly traumatized their children letting them watch South Park, thinking it's a kids' show.
