Can't go wrong with an aged Gouda. A really good, sharp white cheddar is best with beer, but if you want to experience the crunchy bits, aged Gouda is your best bet. If you're like me you'll need a glass of Pinot Noir, a few figs or some berries, a bubble bath, and like a recording of whale songs or some poo poo for the full experience.
