Am I wrong in thinking this is not as bad as it looks? I know with wood beams you can make holes in the webbing (?) part as long as they don't exceed certain sizes and are properly spaced.

I went through all the effort to set up a derrick the one year I deep fried a turkey: https://www.youtube.com/watch?v=O14bgW8xmqk And it was complete overkill. As long as you don't overfill your pot with oil and aren't chucking a frozen turkey into it, you're not going to set anything on fire. I deep fried two turkeys that both came out great, it was super fast compared to oven roasting them, and that crispy skin is just divine. The only downsides are cost of the oil and the cleanup afterwards took forever.
